[New menu] Starting October 2023! Seafood hotpot made with 10 sho of Awaji Island sake

New menu from October 2023: A seafood hotpot course made with one sho of Awaji Island local sake.

This dish uses a whole 1.8L bottle of "Sennenichi", a local sake from Sennenichi Brewery in Awaji Island, and is served with the alcohol evaporated. This dish is also recommended for those who don't like alcohol. It goes perfectly with shabu-shabu of wild red sea bream that has been raised in rapid currents and chewy Akashi octopus. To finish off the meal, we offer rice porridge in a broth that is full of umami. It can be enjoyed refreshingly with Awaji Island seaweed salt and ponzu sauce.

What is Sennenichi Sake Brewery?

Sennenichi Sake Brewery was founded in 1875 and is one of only two historic sake breweries on Awaji Island. They make sake with the "taste of Awaji Island" using rice and water grown in the soil and water of Awaji Island. For 130 years, Sennenichi Sake Brewery has been making sake in Higashiura, Awaji, an area blessed with the bounty of the mountains and sea. It is a small brewery worthy of being called a sake brewery, and they are committed to traditional hand-brewing, using the same quality mountain water from Kanekiyama as Miyamizu, the best rice, and koji that feels the warmth of the hands of the master brewers, to faithfully produce refreshing, delicious sake that suits the fishing town. The sake used this time is Sennenichi's "Josen," a delicious sake that retains the sweetness of the rice.
